Published on February 25, 2017
Ingredients
- 6oz 72% (or higher) dark chocolate
- 1 medium (Hass) avocado
- ½ tsp vanilla extract
- ½ tsp liquid (or granulated) Stevia
- ¼ tsp salt (pinch)
- 2Tbsp unsweetened cocoa powder
- 2Tbsp granulated stevia
- Optional: ½ tsp sea salt, to top truffles
Directions
Melt dark chocolate slowly.
In a different bowl, mash avocado. When the chocolate is melted, combine it with the mashed avocado and stir them together. Then add in the vanilla, stevia and salt.
When this is combined and free of clumps, place in the refrigerator for about 30 minutes. When cooled and hardened, scoop it into 18-20 balls and roll them until they are smooth.
Mix unsweetened cocoa and granulated stevia in a small bowl. Then, roll each ball in cocoa powder mixture and serve. Optional: top each truffle with a tiny sprinkle of sea salt.
Place any leftover truffles in an airtight container in the refrigerator.
